This Extra Spicy {Honey Glaze} Chicken is one of my go-to weeknight dishes.
I cannot take credit for this recipe at all. I found it on Nutmeg Nanny. It is my husband’s favorite chicken dish and causes others in his office to swoon when he brings it for lunch. It is that good. It is really, really spicy. As in extra spicy. As in keep a fire extinguisher close by when you serve it.
I’m a Cajun from Texas so spicy doesn’t affect me ~ making this dish right up my alley. It’s more of a warm weather dish, however, I occasionally whip it up and serve it with cooked cabbage.

Begin by mixing together your spices and honey/vinegar mixture. I whisk the honey/vinegar mixture with a fork so that is fully blended. Set these aside for a few minutes.

You will need to line a four-sided cookie sheet with parchment paper. I usually cut my parchment paper slightly bigger than the cookie sheet and fold the edges up a little. When you add the honey glaze it goes everywhere. If you don’t use a pan with sides you might as well buy a new oven. It will be a huge mess, I assure you.
When you take your chicken out of the package, be sure to pat each piece dry with paper towels. They need to be dry for the spices to stick. Coat each side of the chicken with the spice mixture.

DO NOT put the honey glaze on the chicken, yet. Put the chicken in a 400* oven for about 15 minutes. The baking time will depend on the thickness of the chicken thighs. Check to see if the chicken is cooked after 15 minutes. If so, pull it out of the oven and turn over the chicken then cover all of the thighs in the honey glaze.
Put the honey glaze coated chicken back in the oven for another 5-10 minutes ~ until the chicken is fully cooked. If you have an electric oven, you can do this under the broiler for crispier chicken. I have gas, so I just stick them back in the oven. If you go too long the honey glaze may begin to smoke. Watch them carefully so this doesn’t happen. It isn’t a bad idea to run the vent fan.
Remove the chicken from the oven and let it cool for a few minutes then serve it up. Did I mention that it’s gluten-free, too.
