Roasted Strawberry Ice Cream

If you haven’t tried Homemade Roasted Strawberry Ice Cream, you are seriously missing out. Roasting the strawberries for a few minutes brings out the strawberry-ness of the strawberries.
The recipe is in a printable form below, but I wanted to show the actual steps since it is a little different.
First, you need a pint of fresh strawberries that are hulled and sliced {sorry, no picture}. Cut the strawberries into thick slices and coat with 1/4 C. – 1/3 C. Coconut sugar. Spread out on cookie sheet. Roast at 375-degrees for 7-10 minutes {depending on thickness}.
Once cooled, puree strawberries into a fine slurry; add in 2 T. lemon juice. Chill for at least 1 hour.
Gather the following ingredients
- 1 1/2 C. Whole Milk
- 2 T. Tapioca Starch
- 4 T. Yogurt Cheese (For this next step I use yogurt cheese. This can be obtained by straining yogurt through a cheese cloth. You can also use Greek yogurt.)
- 1/8 t. salt
- 1 1/2 C. Heavy Cream
- 3/4 C. Coconut Crystals (aka Coconut Sugar)
- 2 T. Coconut Nectar
Mix 2 T. of milk with tapioca starch.
In a medium sized bowl, blend the yogurt cheese and salt together. Whisk in the milk and tapioca starch mixture. Blend until smooth.
Add in the heavy cream, milk, coconut sugar, and coconut nectar. Whisk until smooth.
Blend in 3/4 C. of the strawberry mixture. When completely blended into milk mixture, pour into pre-frozen (see manufacturer’s directions for this) ice cream maker canister.
Add the dasher into the canister.
Follow the directions of your particular ice cream maker’s setting and let the machine churn the ice cream until it is rich and creamy.
Remove ice cream from canister and press it down with plastic wrap. Cover and put into freezer for 1-2 hours in order for it to ripen.
Removed from freezer, and enjoy! Top with leftover strawberry slurry.
