When the weather starts to change that means it’s time for simple one-pot meals like my Crock Pot Paleo Pot Roast. Most pot roast recipes call for potatoes, carrots, onions, garlic, etc.

Crock Pot Paleo Pot Roast

When I make a pot roast, I want to avoid certain foods such as russet potatoes which can cause inflammation. For this recipe, instead of regular white potatoes I use sweet potatoes and cauliflower. Voila! Perfectly delicious pot roast without all of the problems caused from eating starchy foods.


Ingredients

I apologize for not having prep photos. There’s so little to this recipe, I didn’t think they were necessary. Plus, who wants a picture of an uncooked roast beef. Not me.

Gather a few ingredients

3 lb. Boneless Chuck Roast

2 T. Oil {I use Avacado Oil}

3 Sweet Potatoes (about 1.5 lbs)

1/2 Head of Cauliflower

3 Carrots

1 medium Onion

3-6 cloves minced garlic 

1/2 c. Balsamic Vinegar (optional)

Salt & Pepper


Directions

The veggies can be prepped the night before and stored in a zipper bag in the fridge. I also like to brown my roast in a little oil before putting it in the slow cooker. Once it is cooked, I deglaze the pan and add the drippings into the slow cooker.

You may have noticed that I use avocado oil for browning the meat. I have come to love this oil; they sell it at Costco for a reasonable price. It can take high heat and it doesn’t have a strong flavor like olive oil. Feel free to use your favorite oil for browning ~ or skip the browning if you want.

Once browned, add the roast to the slow cooker, cover with the veggies, sprinkle on some salt and pepper, and top with balsamic vinegar. Depending on the size of your roast and the cut of the meat, cook on high for 3-5 hours then turn to warm.

Try this new version of an old favorite. I use a couple of unusual ingredients for a new twist on comfort food. The easiest dinner you'll ever make is Crock Pot Paleo Pot Roast.

Ingredients

  4. Depending on the size of your roast and the cut of the meat, cook on high for 3-5 hours then turn to warm.
  5. This recipe also works well with the Instant Pot Slow Cooker setting. The only difference is you can brown the meat using the saute feature which means one less pot to clean.

Dutch Oven Instructions

Now, what if you cracked your slow cooker crock like I did recently. Well, you can still have a Paleo Pot Roast. Follow all of the directions above and then pop it into a dutch oven, cover, and bake at 325° until the meat is tender and the veggies are cooked. When I use the oven I like to cook the roast for about an hour before I add in the veggies.

If you own an Instant Pot electric pressure cooker,  let me make your life even easier. Use the saute function to brown your meat in oil. I brown my meat on the highest setting to sear it, then lower my saute setting and let the meat finish browning. When the meat is nicely browned, I deglaze the pan and add the rest of the ingredients. Then, I set my Instant Pot on the lowest slow cooker setting and let it cook for about 4 -6 hours, depending on the size of the roast. Once done, the Instant Pot goes to a true keep warm setting until you’re ready to serve.


This recipe works for chicken, too

But wait, there’s more. I make this same recipe using a whole chicken! Instead of browning the chicken, I massage it with avocado oil and add half of the onion to the cavity. Then I either cook it in the slow cooker or the oven {if my slow cooker is in use that day}. If I’m using a dutch oven then I cook the chicken uncovered for about an hour and then add the veggies.

Perfectly simple comfort food. Don’t expect leftovers. It’s that good.
