Candied Yams

Ingredients
  • 3 lbs. Yams (or Sweet Potatoes), Peeled and Cubed
  • ¾ C. Organic Sugar
  • ¾ C. Coconut Sugar
  • 1 Stick Organic Butter (cubed)
  • 2-3 T. Organic Milk
  • ¼ t. Organic Cinnamon
  • (Optional) Dried Cranberries
  • Bag of Mini Marshmallows (they do sell organic ones at Whole Foods!)
Instructions
  1. Preheat oven to 350-degrees.
  2. Cook yams in Instant Pot according to above directions.
  3. Once yams are finished transfer them to a mixing bowl while still hot.
  4. Add both sugars, butter, milk, and cinnamon.
  5. Mash until well blended. Either a mixer or hand masher will work.
  6. Add yam mixture to greased casserole dish.
  7. (Optional) Sprinkle some dried cranberries across top.
  8. Top with mini marshmallows.
  9. Bake uncovered until the marshmallows are browned.
  10. Serve hot.
