Gluten-Free Pulled BBQ Chicken

Who’s hungry for a BBQ chicken sandwich? If you’re like me, finding healthy, gluten-free sandwiches can be almost impossible. In addition, finding healthy Crock Pot recipes that are gluten-free can be even more impossible. Fear not, help is just a few steps away.

My recipe for Gluten-Free Pulled BBQ Chicken is a healthy, gluten-free Crock Pot recipe. What makes it totally gluten-free is my homemade BBQ sauce. No mystery ingredients like hidden msg (usually labeled natural flavorings). Nope, my BBQ sauce is made with coconut aminos and coconut sugar instead worcestershire sauce and brown sugar.

Now, for the most ridiculously easy recipe ~

Gluten-Free Pulled BBQ Chicken

Yield: 1 cup

Gluten-Free BBQ Sauce

Ingredients

  • 1/4 C. Water
  • 1/4 Cup Coconut Aminos
  • 1/4 C. Coconut Sugar
  • 1/4 C. Ketchup
  • 1 t. Garlic Granules
  • 2 T. Chili Powder
  • 1-2 t. Liquid Smoke
  • Dash of Tabasco Sauce

Instructions

    1. Blend all ingredients together into small sauce pan.
    2. Heat until mixture comes to a boil.
    3. Turn down heat at simmer for 5-10 minutes - or until begins to thicken.
    4. Let cool in pan.

Anyone who has ever eaten a gluten-free hamburger bun knows how absolutely dreadful it can be. It makes eating something like pulled BBQ chicken impossible. The bun crumbles in your hand and you’ve got a huge mess, likely, down the front of your shirt. For me, it falls into the category of, “Why bother.” Never again.

However, I have found the most wonderful gluten-free burger buns made by Canyon Bakehouse. They stay together and are seriously close to a ‘real’ burger bun. I purchased mine at Whole Foods in the gluten-free frozen breads section. They aren’t inexpensive, but perfect for something like this recipe.

In my world of gluten-free eating ~ I consider these buns a real game changer  ~ it’s as close to a whole grain bun that you will find in the world of gluten-free. I spread a little butter ghee on a burger bun and set it on a hot grill ~ it toasted perfectly. Oh. happy. day!

Want to change it up a bit – why not replace the chicken with a small pork roast ~ making BBQ pulled pork sandwiches. Either way, you’ve got some quick and yummy dinner options.

Depending on the serving size, you can get 6-8 pulled BBQ chicken sandwiches from one recipe. You’re gonna’ love it.
